It’s a noun, Because a noun is a person, place, or thing. When we notarize a document then it becomes an action because we’re now doing something (signing and stamping)
interesting. So what happens when you “do a notary”. used in the sentence; Hi honey, I have to go out and do a Notary.

There is a difference between spelling and grammar. Notorial is not a word no matter how it is used in a sentence. Make certain you are correct on all points before you use your wordsmithing ability to correct others.
An additional way to tell I know someone well enough to not ask for ID when I perform notarial acts for them: I have their name added to my spell checker.
